Duties and responsibilities include but are not limited to the following:

  • Uses computer terminal to retrieve recipes, production reports, diet census and patient census and produces printouts of this information for various work units in the kitchen.
  • Calculates quantities of foods to be prepared by the food production unit to ensure that appropriate amounts of food are prepared, while minimizing wastage.
  • Maintains an effective system of communication with clinical staff and others to maintain appropriate levels of supplies for planned events.
  • Implements scientific methods of food preparation to retain maximum nutritive values, appearance and palatability of foods.
  • Prepares food by peeling, chopping, grinding, paring, cutting, slicing, pureeing, dredging, baking, roasting, steaming and/or other production methods.
  • Blast chills prepared food items and maintains accurate temperature logs to ensure food safety. 
  • Stores loaded food tray carts in the food bank prior to rethermalization.
  • Weighs, measure, and assembles ingredients for regular and modified menu items. 
  • Labels and stores prepared food items correctly in the food bank.
  • Ensures correct food items are pulled for meal service.
  • Ensures proper temperature control, food handling and storage standards are met for prepared and leftover items in the food bank.
  • Issues appropriate quantities of fresh, frozen, canned and dry goods, according to patient census, diet census, historical data and recipe requirements.
  • Covers, dates and stores leftovers according to established procedures.
  • Monitors preparation, production and service for quality standards.

Work Schedule: Various Shifts (AM Shifts, PM Shifts or Relief Shifts); Scheduled days off will vary.
